Rice tikki

This is yet another delicious snack recipe recipe from my friend’s kitchen.  She has a great passion towards cooking and in trying out novel recipes apart from being a very creative person who has expertise in quilling and jewellery making.

Ingredients:

1/2 cup left over mashed cooked rice
1/2 cup mashed potato
1/4 cup boiled corns
1 medium onion, chopped fine
1 green chilli chopped
1 tablespoon cilantro leaves, chopped fine
1 pinch turmeric powder
1/2 teaspoon chilli powder
1/4 teaspoon garam masala
3 tablespoon gram flour(besan)
1 teaspoon chopped cashew nuts
salt as required
oil for shallow frying

Instructions:

Mix everything except oil
Mix very well, check the taste, add salt and chilli powder if required
shape the mixture into medium sized tikkis or patties.
heat oil in frying pan or skillet.(i used little oil for shallow fry)
Place tikkis on frying pan.
When the base is lightly browned, flip it and cook until all sides are browned.
Serve tikki hot with mint chutney or tomato ketchup.
