Ingredients
Basmati Rice – 1 cup
Chopped and cubed carrot, green peas, corn, green beans – 1 cup
cubed potato pieces – 1/2 cup
caulifower florets – 1/2 cup
cinnamon – 1 piece
Cardamom/Elaichi – 2
Fennel seeds – 1/2 tsp
Cloves – 4
Oil and sal – as required
To grind
Onion – 1 chopped
Ckriander/Cilantro leaves – 1/2 cup
Mint leaves – 1/4 cup
Garlic pods – 4 nos.
Ginger – small piece
Green chillies – 3
Salt to taste
Method:
Wash and soak rice in 2 cups of water.
Grind the ingredients under “To Grind” section.
Heat oil in a pressure cooker and saute cinnamon, cloves, cardamom and fennel seeds.
When these get toasted and the aroma comes out, add in the cut veggies and ground paste. Mix well and saute.
When the raw smell smell fades away, add in rice along with the soaked water. Now close the pressure cooker with its lid and let it cook for 2 whistles. Remove pressure cooker from fire and let it rest for sometime till the pressure receeds.
Open the lid and stir the cooked rice carefully without breaking it.
Serve hot with a raita or salad.
