Appe/ Kuzhi Paniyaaram and Kaara Chutney

My new found passion in food photograpy and the ever existing taste for good food drives me to jump into action to try out variety in cooking.

Yesterday when my kids demanded a quick snack, my eyes fell on this left over dosa flour and pat came the idea which resulted in this kuzhi paniyaaram and kaara chutney combo.

Method:

The idli/ dosa flour required to make the Appe batter should be  little sour, I usually use the last batch of dosa batter.

Saute mustard seed, spli urad dal , few coarsely broken peppercorns, finely chopped green chillies and  chopped onions in little oil.

Then sprinkled finely chopped coriander/cilantro leaves, chopped curry leaves and added this mix to idli/dosa batter.

Add salt if required and mix well. The Appe batter is ready.

Grease the Kuzhi paniyaram/Appe pans with gingelly oil and pour in the batter. When the upper batter gets cooked, pour oil using a silicone brush to grease the sides and turn it over carefully with a wooden stick or spoon.

Le5 the other side cook well.

Take the paniyarams from the pan and relish  with kaara chutney.  Kaara chutney is one unbeatable accompaniment with Kulippaniyaaram, the evergreen combo!
