Coconut Rice

South Indian style coconut rice

Coconut rice – South Indian stylE, is a yummy, tasty, rice recipe with grated coconut as the main ingredient.

Ingredients

Cooked Rice – 2 cups

Coconut – 1/2 coconut (6oz or 3/4 cup) Freshly grated

Mustard seed – 1 tsp

Urad dal – 1 tsp seeds, urad dal, bengal gram dal,

Bengal gram dal (Channa dal) – 1 tsp

Dried red chillies – 3 nos.

Coconut oil – 2 tbsp

Salt to taste

Curry leaves

Cashew nuts or groundnut – 100 gm

Method

Heat coconut oil in a wok or pan.

Temper mustard seeds, urad dal, bengal gran dal, dried red chillies, curry leaves.

Add grated coconut to this mixture qnd roast under medium heat. Please take care not to overcook or burn the added grated  coconut.

Add required salt and then mix in the cooked rice, till combined well.

Finally add roasted cashews.

Serve hot with a spicy gravy and some fries.

Tips:

Instead of freshly grated coconut, you can substitute it with dried dessicated coconut too.
