Bhindi Jaipuri

Ingredients:

Lady’s finger/ Okra                   – 250 gm
Finely chopped onion                – 2 tbsp
Chilli powder                              – 2 tsp
Jeera/cumin powder                 – 3/4 tsp
Dry mango(amchur) powder.  – 3/4 tsp
Corn flour                                    – 2 tbsp
Besan                                            – 3 tbsp
Lemon drops or vinegar            -1 tsp
Ground cashews or badam.      – 1 tbsp
Red food colour (optional).       – a pinch
Salt to taste
Oil 
Method:

Wash the okra and dry it with tissue paper
Cut off the edges and finely slice the okra lengthwise.
Toss and Mix the above ingredients. Sprinkle water drops if needed. Care should be taken while adding water so that the mixture doesn’t becomes soggy.
Heat oil in a kadai and deep fry. Use a non-stick kadai and add little oil to fry, if you are diet conscious.
This is a dry recipe. These crispy, crunchy and delicious fries can be served as a snack or as an accompaniment.

 

Tips:

Dont worry if you do not have Amchur in stock at home. Just add few lemon drops or chat powder.
