This is an interesting recipe that I learnt from my cousin sister Mrs. Aarthy Nixen. She is an expert in barbeque/tandoor and grill recipes and I love her meticulous and delicious recipes. Thanks to her for enlightening me with a lot of new recipes without any second thoughts.
Ingredients
Lamb chops – 750 gm (Mutton with bone shoulder piece)
Chilli powder- 1.5 tsp
Pepper powder – 1 tsp
Coriander powder – 1 tbsp
Vinegar – 2 tbsp
Lime juice – little
Maida – 1 to 2 tsp
Finely chopped coriander leaves
Yoghurt – 2 tbsp
Sugar _ a pinch or two
Salt to taste
Oil – 2 to 3 tsp
Method
Prepare the marinade with all the ingredients except oil in a wide basin
Wash and clean the lamb chops pieces. Just poke the chops here and there with a fork and then apply the marinade.
When the marinade has been applied evenly over the pieces , add oil and mix well.
Let this marinade stand for 30 to 40 minutes and then cover the top of the basin with a plastic wrap.
Refrigerate it overnight or atleast for four to five hours. The more the marination time, better the taste is.
After marination, you can either choose to bake in a oven or shallow fry in a tawa until the pieces get cooked completely.
I chose the baking method.
For this preheat the oven to 400F and place the pieces on a non stick roast/baking pan with non-stick. grill rack. Line the bottom of the pan with wax paper to catch the drippings and place the pieces on the rack.
Bake at 400F for 30 to 35 minutes on each side. So roughly it takes an hour to cook completely. Please note that this cooking time may vary deprnding on the size and tendency of the meat and hence lake sure to check in between at regular intervals.
Once the baking oart is done, changethe oven settings to broil option and broil at high for 1 minute. Please take care while broiling so that the pieces don’t get burnt.. Skip broiling part if you feel the meat has been cooked completely. Broiling gives a crispy finish touch.
Take it out and let it cool down for few minutes.
Serve while it is still hot. Do try out this recipe, as it is not tiresome, yet very delicious and satisfying.
Note:
If you don’t want to bake, you can shallow fry the pieces on a tawa. Shallow fry on one side for 5 minutes initially @nd flip over and fry for another 10 minutes. Flip over and shallow fry for 5 minutes. Repeat this step until meat gets completely cooked.
