Mango Duet Popsicle

Ingredients:
Mango Puree – 1 cup (from 2 or 3 ripe mangoes)
Heavy whipped cream – 200 ml
Honey – 2 tbsp
Sugar ( add if needed)
Vanilla extract/essence – 1 tsp

Method:
Blend the cubed mangoes to make a puree. You can also use store bought readymade mango puree. If you are not satisfied with the taste of the mangoes or mango puree, feel free to add sugar to taste. Also, you can add mango essence, if extra flavour is needed. In this recipe, I added extra sugar.


In a separate bowl, pour in the heavy whipping cream and whip well until it becomes frothy. Then add in honey, vanilla extract and combine.


Now take the popsicle moulds and start layering. To start with, pour in the mango puree. Then pour the cream mix and then add mango puree. Keep alternating the layers till the mould fills up. Use a long kabob stick and stir slowly and gently, so that the cream mixes  with the puree resulting in a mild merge.


Close the popsicle lids and freeze it for 4 to 6 hours.
A simple tip to take out the popsicles is to leave the moulds or show them under lukewarm water for few minutes.

Tip:

Make sure to whip the heavy whipped cream well, to make the creamy layer super soft and creamy.
