A very simple hassle free, no flour, no oil, healthy recipe. A combination of oats, banana, eggs and yoghurt make these muffins nutritious, while at the same time making no compromise in taste.
Yoghurt Banana oats muffins
Ingredients
Instant or original oats 2 cups
Baking powder 1.5 tsp
Baking soda 1/2 tsp
A pinch of salt
Banana 2 nos
Eggs 2 nos
Plain Yoghurt(thick) – 1 cup
Brown sugar – 3 tbsp
Honey – 1 tbsp
Vanilla extract – 2 drops
Pinch of ground cinnamon powder
Nuts
Chocolate chips
Method
Preheat the convection oven to 350F.
Combine oats, baking powder, baking soda, salt in a blender and ground coarsely, say for 15 seconds. Transfer the flour mix to a wide mouthed bowl and set aside.
In a separate blender jar add bananas and mash the bananas using a fork until soft “and mushy. To this add yoghurt, eggs, sugar, honey, vanilla extract and cinnamon powder. Use the pulse mode of blender to combine this mixture well (5 to 10 seconds).
Pour the contents to the oats mixture and combine well using a spatula. When the mixture becomes even, add finely chopped nuts of your choice and mix well.
In a muffin tin pan, place paper cups. Grease lightly with cooking spray. Using an ice cream scooping tool, fill the muffin cups. Top each muffin with chocolate chips(optional).
Place the muffin tin pan inside the oven and bake for 18 to 20 minutes or until cooked. Check muffin with a toothpick. If the toothpick comes out dry, without sticky flour the muffins are ready.
Allow the muffins to cool completely, by placing them on a wire rack.
