Banana bread muffins

ingredients

Silted All purpose flour – 2 cups

Baking soda – 1 teaspoon

Salt – 1/2 teaspoon

Bananas – 3 to 4 (over ripe)

Butter – 1/2 cup or 1 stick

Brown sugar – 3/4 cup

Eggs – 2 large (beaten)

cashew nuts  (optional)

Method:

Preheat oven to 350F.

In a large bowl combine flour, baking sodq and salt and mix well.

In a separate bowl combine together the butter and sugar. Stir in beaten eggs and mashed bananas and blend well.

Then add banana mixture to flour mixture and stir until combined. If using an electric mixer, stir well on low mode. This mixture can yield 15 – 16 muffins.

Grease muffin pan with butter spray and powder flour.

Fill muffin tins with batter (almost to the top).

Bake 20 to 25 mins or until toothpick comes out clean.
