Made these real yum buttermilk pancakes from scratch and they turned out to be a big hit. This is a neat and simple recipe to make soft, fluffy and super tasty pancakes at home. Topping it with fresh homemade whipping cream, strawberries and glazing honey on top of it, this is an absolute delight to the tastebuds. Do give it a try and please share your feedback.
Ingredients
Dry ingredients for the pancake flour:
Unbleached All purpose flour – 2 cups
Sugar – 2 tbsp
Baking powder – 2 tsp
Baking soda – 1/2 tsp
Salt – 1/2 tsp
In a large bowl whisk togetther all these ingredients, until combined very well for about 30 seconds.
Liquid mixture for making the batter:
Buttermilk – 2 cups
lemon juice – 1.5 tsp
Large eggs – 2
Melted and cooled butter – 2 tbsp
In a large measuring cup, beat together all these ingredients.
Mixing the batter:
The key to perfect pancakes is keeping the batter lumpy. Make a well in dry ingredients and stir in wet mixture. Let rest 10 minutes so gluten can relax for a more tender end result. Please avoid over stirring. Some lumps in the batter makes the pancakes soft and fluffy. Ovemixing breaks thse lumps making them smooth and the pancakes would become flat.
Cooking the pancakes:
Too much fat in the pan leads to uneven browning and so use it sparingly. Heat a large non-stick or cast-iron skillet over medium flame. Add 1 teaspoon of oil, wipe it with a tissue, leaving bhind a thin layer.
Add heaping quarter-cups of batter to skillet, spreading lightly with the bottom of the cup. Cook until bubbles form on surface, edges have set and the undersides are golden-brown, 2 to 3 minutes. Flip and cook 2 minutes more.
Transfer to a ire rack, set in a rimmed baking sheet; keep warm in a 200F oven.
Tips:
- Lemon juice gives that tang lost from modern packaged buttermilk. If you are using homemade sour buttermilk, you can skip this step.
- Initially make a single pancake to test. If it gets too dark on the outside, or gummy in the middle, adjust the heat to medium-low. If it sets up at the edges, before developing color on the bottom, turn up the heat.
