Cucumber Kosambari

Cucumber Kosambari

Ingredients:

Cucumber – 1

Split Green gram (Paasi Parupu) – 1 tbsp

Mustard seeds – 1 tsp

Urad Dal – 1 tsp

Green chillies – 2 nos

Grated coconut – 1 tbsp

Curry leaves

Salt to taste

Method:

  • Peel off the  skin and chop the cucumber  into small pieces.
  • Soak split green gram in water for 10 – 15 minutes.
  • Heat oil in a kadai and fry mustard seeds, urad dal, curry leaves  and chopped green chillies.
  • To this add soaked split green gram and water and let it boil.
  • When the split green gram dal gets almost 80% cooked, add chopped  cucumber.
  • Sprinkle water when needed and add required salt.
  • Mix and saute till the whole mixture until it  gets cooked well.
  • Finally add grated coconut and remove from fire.
  • Serve this dish as an accompaniment to rice and hot curry.
  • This is a cool recipe for a hot summer day.
